Ingredients

quinoa

water
2
green onions
finely chopped
1
cup
cherry tomatoes
sliced
½
cup
corn
1
yellow pepper
cut in small cubes
½
cup
Kalamata black olives

feta cheese
diced
1
tsp
lemon zest
10
leaves
fresh mint
minced
¼
cup
olive oil
1
tbsp
white balsamic vinegar
1
tbsp
lemon juice
1
tbsp
maple syrup
salt and pepper

Instructions
Bring the water to a boil, then add the quinoa.
Reduce to low heat, cover, and simmer for 15 minutes.
Remove from heat and let stand for 5 minutes.
Fluff quinoa with a fork. Let cool.
In a large bowl combine the vegetables, feta cheese, mint, oil, and balsamic vinegar. Season with salt and pepper.
Add quinoa and stir to combine.
Refrigerate salad for 1 hour
Serve cold.
