This cheesy sweet potato noodles recipe with black beans and spinach is guaranteed to become a favorite! It’s entirely vegan, dairy-free and great as either a main course or a side dish that’s ready in 15 minutes.
Heat the olive oil in a frying pan and add the spiralised sweet potato. Fry for around 5 minutes, tossing frequently, until starting to brown.
1 tbsp olive oil, 1 lb sweet potato
Melt vegan butter in a saucepan over a medium heat and add an onion, garlic, salt, pepper, paprika, cumin and onion powder. Cook for 5 minutes, until softened and fragrant.

Add flour and stir together, before gradually adding in plant based milk and whisking until the sauce thickens before adding more.

Add grated vegan cheese and stir once again until the cheese melts.

Add the black beans to the noodles together with the sauce, followed by spinach and scallions. Serve when the spinach wilts.
