Wash the cauliflower and grate it with a coarse grater. Peel the onion and grate it. Whip the egg, then add flour, cheese, salt, and pepper.
Add the egg mixture to the cauliflower, and mix well. Let stand 15 to 20 minutes.
Pour the olive oil in a pan, take a ¼ cup of cauliflower mixture, and form a cake. Cook for 4 to 5 minutes on each side over low heat. Repeat until all the dough is gone.
When the patties are cooked, serve hot or warm with sour cream. These patties make a perfect side or a perfect vegetarian main dish topped with a salad.
