Instructions
In a saucepan, bring water to a boil. Remove from heat, add couscous, then cover and let it sit for 5 minutes.
In a skillet, add olive oil and cook pepper, cauliflower, onion, and spices over medium high heat for 5 minutes.
In a bowl mix couscous, vegetable mixture, chickpeas, olives, feta, salt and pepper, and mint.
