Place the peas, cilantro, pickled jalapeños, and smashed garlic clove into the bowl of a food processor. Pulse a few times, then run steadily until the mixture forms a smooth paste. You may need to stop and scrape the sides a few times.
Add the lime juice, avocados, and salt. Pulse, stopping to scrape the sides as needed, until the avocados are broken down and the guacamole has reached the desired texture.
Taste, and adjust seasonings if necessary.
Scrape the guacamole into a bowl, garnish with cilantro and extra pickled jalapeños.
