Preheat oven to 400 degrees Fahrenheit (204 Celsius).
Roll out the pizza crust on a clean, floured surface. You can make one large pizza or divide the dough into smaller portions for personal sized pizzas.
Whisk together the peanut butter, vinegar, ginger, garlic, brown sugar, pepper flakes, and 1 tablespoon of water in a small bowl. Add additional water if needed, one tablespoon at a time, until sauce reaches a creamy consistency.
Spray a nonstick pan with cooking spray and heat over medium high heat. Sauté the bell peppers and onions for 5-7 minutes, until softened. Set aside.
Spread sauce onto the pizza crust(s). Top with the peppers and onions. Bake for 10-15 minutes or until crust is golden brown. (Check often, as bake time can vary depending on your crust recipe.)
Remove pizza from oven and top with the mung bean sprouts and fresh cilantro. Serve!
