Were you trying to read some of my latest posts yesterday and you got error pages instead? Yeah, sorry about that. I had a little snag with my previous host and nameservers and other fun things that make me want to scream into a pillow. And I know I said this two weeks ago when I first switched hosts, but things should be good from here on out. (This time, I mean it. I think.)
Here’s what I ate this week:
Baked Cholula Potato Chips // I substituted Cholula for the sriracha in my Baked Sriracha Potato Chips recipe–it could have used a wee bit more hot sauce, but these are among my favorite potato chip creations to date. If you haven’t tried making baked potato chips, you really should. They taste like crispy amazingness.
Great Life by Lucinda Veggie Burgers // Hello, new favorite veggie burger! I’m so picky when it comes to my veggie burgers. I don’t like the ones made with soy or the ones meant to taste like meat. I like the ones made with grains and veggies–which, sadly, are getting harder and harder to find at grocery stores. Great Life by Lucinda sent me two of her veggie mixes to try and I was really impressed with how good they were. “Veggie burger mix” made me immediately think of TVP, but these are made with real ingredients. We tried the Mild Curry and Roasted Garlic, Dried Tomato & Chive burgers and they were both awesome–definitely one of my favorite recent food discoveries. And guess what? They go well with Baked Cholula Potato Chips! (Yeah, I’m really pushing the potato chips today, huh?)
Cheesy Penne with Broccoli from Cooking Light // Instead of mustard and nutmeg, I added a healthy squeeze of sriracha to this. This is an easier, more adult version of mac & cheese–and it’s only 381 calories per serving.
Whole Wheat Chocolate Chip Pancakes // I used my trusty Whole Wheat Chocolate Chip Pancake Mix to make these. And then I made Chris do the actual pancake making because I lack the coordination to flip pancakes without making a complete mess. (I usually burn them too.) Sad but true. It was too late to take a real photo, but here they are, cooking up all pancake-like on the griddle.
Potato, Cauliflower & Cheddar Bake from Everyday Food // Oh man, I miss this magazine. I know it’s coming as an insert to Martha Stewart Living now, but it’s just not the same. This is a nice, solid side dish. Bonus: there is crispy baked cheese on top.
Pesto Potato Soup with Toasted Pine Nuts from Fresh from the Vegetarian Slow Cooker // I know, I’m always going on about this book, but I love it! And this picture looks weird with all those floating pine nuts, but this soup is delicious. Without the pesto, it’s just potato soup. Meh. But with the pesto? So good!
Gingery Green Smoothie // I decided to experiment and throw a big chunk of ginger into a green smoothie (made with 2 clementines, some almond milk, a few frozen mango pieces, and my beloved Amazing Grass). There were a few stray fibers of ginger in the smoothie, but less than I expected. Success!
