What I Ate This Week 2012 Favorites
I have been busy this week working on developing a bunch of recipes, so I didn’t have time to cook anything else. But let’s use this as an opportunity! An opportunity to re-share some of my favorite What I Ate This Week recipes from 2012!

It was hard to narrow this down to only 10 favorites because I ate so many delicious things this year. And after going through my old WIATW posts, I now have a list of about 20 recipes I need to make again soon. Anyway, in no particular order, here are my 10 favorite recipes from What I Ate This Week in 2012:

Leek & Olive TartLeek & Olive Tart from Rikki Snyder // I used parmesan cheese on this instead of camembert, but OH MAN this was delicious. Leeks and kalamata olives are two things that I just can’t get enough of.

Paper Bag PopcornPaper Bag Popcorn from Squawkfox // Microwave popcorn. In a paper bag. Your life will never be the same!

Baked Pumpkin Mac & CheeseCreamy Pumpkin Baked Rigatoni from Kitchen Treaty // It’s like mac and cheese! But with pumpkin! How can you not love this?! I added a little sage to the recipe since I had it on hand.

Eggplant Parmesan SandwichEggplant Parmesan Sandwiches from What About Second Breakfast // I changed this recipe to make it a little bit lighter–I sauteed the eggplant instead of frying it and left out the butter. I still think about these all the time, so I think they’re just about due for a remake.

Sesame Soy Spaghetti SquashSesame Soy Spaghetti Squash with Broccoli and Edamame from Once Upon a Cutting Board // I love having this for lunch. And the sauce is good on other veggies too!

Mexican Chocolate Banana Soft ServeMexican Chocolate Banana Soft Serve // I find plain banana soft serve to be a wee bit… plain. I like this one more because it does a better job satisfying my craving for something decadent, minus the whole decadence part.

Strawberry Oat SconesStrawberry Oat Scones from MidwestVeg // This was my first attempt making scones and my first attempt at vegan baking. Success and success! I used strawberries instead of blueberries since they were in season.

Wild Mushroom Melt PaniniWild Mushroom Melt Panini from Panini Happy // Grilled cheese is always a favorite around here, but this one has the addition of delicious sauteed mushrooms!

Baked Rosemary Onion RingsBaked Rosemary Onion Rings from Food Doodles // These are amazing. I have a weakness for fast food made healthier (in fact, I think I’m going to do a theme week based on that soon!) and these onion rings did not disappoint.

Fried Cauliflower with Tahini & Pomegranate SeedsFried Cauliflower with Tahini & Pomegranate Seeds from Cooking Light // This has bad reviews on the Cooking Light website, which is surprising to me because we loved it so much. And look, it’s so pretty!

that Fried Cauliflower with Tahini & Pomegranate Seeds looks amazingly delish!! Since I’ve never never eaten a pomegranate since the last time you posted about them I might be a little hesitant on adding those to this dish, lol
