If you’ve been anywhere near Pinterest lately, you know that non-dough pizza crusts are all the rage. Quinoa, cauliflower, zucchini—whether you’re gluten free or just looking to increase your veggie intake (good for you!), making your crust out of veggies or whole grains is a genius way to to pack more nutrition into everyone’s favorite food, and lighten it up while you’re at it. Oh, and to dramatically decrease your pizza budget. Because once you start making healthier pizzas with fresh ingredients at home, you’ll have no use for delivery grease bombs.

If you don’t know where to start with making your own veggie crust, cauliflower is especially easy to work with. It does take a little effort—a whirl in the food processor, a couple stints in the oven, some seasoning and TLC—but once you go cauli crust, you may decide to forego the dough altogether from now on. This how-to video from Cooking Light shows just how easy it is to get all the familiar flavors of pizza with none of the grease. The cauliflower bakes into a satisfyingly crispy texture that’s almost like a cracker or flatbread. The addition of cheese—which, yes, goes not just on this pizza, but in the crust—keeps everything intact and adds a nice bubbly texture to the edges.
