Creamy Watermelon Coconut Milkshake

Every month, we round up the best things we’ve eaten—recipes we’ve made, restaurant meals, and impromptu dinners that turned out so good we just have to share them. Here are this month’s favorites:


This creamy watermelon coconut milkshake is definitely the best thing I ate all month! So refreshing and pretty guilt free for a treat. Plus, I have a tendency to buy way too much watermelon all summer long, so it’s a great way to help use it up! —Ashley

My husband and I welcomed our daughter to the world in June and ever since, cooking has been a challenge. Most meals aren’t recipes, but random items I’ve assembled on a plate. (What, a handful of almonds, a stray fortune cookie, and an overripe plum isn’t a balanced dinner?) This Takeout Style Sesame Noodles with Cucumber recipe from Smitten Kitchen was the first actual recipe I’ve made in months. It was perfect because I had an abundance of cucumbers from our CSA box and all the other ingredients on hand already–and it made a lot of food, which meant we had glorious leftovers for the next day. The tahini/peanut butter combination made this version of sesame noodles extra tasty. —Kiersten

I’ve been really bummed about missing my summer tradition of Dairy Queen Blizzards this year, so I decided to recreate them non-dairy style at home—and it totally worked! I softened a pint of So Delicious Mocha Almond Fudge almond-milk ice cream on the counter for about five minutes, threw the whole pint in the blender with a splash or two of almond milk, and blended it for a few minutes. We stirred in some nuts, dark chocolate, sprinkles and coconut flakes at the end, and the result was so close to my beloved Blizzards that I legitimately almost wept. —Dana

This healthy Mexican casserole from Pinch of Yum is officially my new favorite casserole of all time. I love that it’s so full of veggies, easy to prepare, and makes enough to feed an army! Plus it has lots of big bold flavor, which is generally what I look for in anything I eat. —Joanne

    Sounds and looks like a delicious milkshake, I love the combo – watermelon and coconut milk. I will surely try this drink one of these days. By the way congratulations on the new baby! 🙂
