Taco Bowl

  • 2 tbsp olive oil
  • 1 can black beans, rinsed
  • 1/2 cup black olive
  • 1 cup corn
  • 2 Italian tomatoes, cut into cubes
  • 1 cup Cajun spices
  • 4 cups romaine lettuce, chopped
  • 1 cup cheese, grated
  • 1/4 cup guacamole
  • ¼ cup coriander
  • Salt and pepper


  1. In a bowl, combine olive oil, lettuce, black beans, corn, tomatoes, Cajun spices, salt, and pepper.
  2. Garnish with grated cheese, coriander, black olives, and guacamole.
