Every Saturday, we highlight some of our favorite submissions from Potluck. Here are this week’s picks:

Natural Shamrock Shake // Forget the food coloring and unpronounceable ingredients–this is a Shamrock Shake you can feel good about drinking! Get the recipe from Henry Happened →

Thyme Lentils Over Polenta // Lentils are one of my favorite vegetarian proteins–they’re cheap, they’re easy, and they’re delicious! Serving them over polenta makes for a filling meal. Get the recipe from The Taste Space →

Slow Cooker Vegan Split-Pea Soup // Split-pea soup is usually made with ham, but this version is vegan. Hooray! And bonus: you can make it in a crockpot! Get the recipe from 80twenty →

5-Ingredient Quinoa Pizza Crust // Move over cauliflower pizza crust! This gluten-free, vegan pizza crust is made with quinoa, water, salt, baking powder, and oil–that’s it! Get the recipe from Oatmeal with a Fork →

Vegan Slow Cooker Jambalaya // Use your favorite vegan sausage (we recommend Field Roast!) to make this meatless version of the classic Cajun rice dish. Get the recipe from Connoisseurus Veg →

Chocolate Hazelnut Fudge Bites // Yes, this week’s post started and ended with dessert. Isn’t that how it should be? These fudgy little bites are sweetened with dates and just a little bit of honey. Get the recipe from Texanerin Baking →

Thanks for sharing it! I used to make my own meatless jambalaya with a store-bought mix when I was in college and it’s definitely time for me to try making it from scratch. 🙂

Oh boy. My balls! Yay! Thanks so much for including them. And I have to try that pizza! Maybe it’ll get me to like quinoa. 🙂 Though I’m more interested in finding something that would make me like veggies. Do you have any veggie recipes for veggie haters? Help! Please? 😀

I’m kind of that way about fruit. I don’t HATE fruit, but I’m just not that into it. The only way I can really get myself to eat it on a regular basis is if I use it in smoothies. But somehow I don’t think that would work for veggies… 🙂

I think I just now realized how people can sound surprised when they ask, “You don’t like vegetables?!”

You don’t like FRUIT?! It’s so sweet and perfect. At least you do smoothies. And veggies. 🙂

I have to puree my veggies to get them down and even then I gag. I did try a veggie smoothie once and that just… no.

Well, like I said, it’s not that I don’t LIKE fruit, it’s just so meh to me. I would pick Brussels sprouts over any fruit any day of the week. I try really hard to make myself eat it more often, but I wish it came naturally to me. :/
