Sweet Onion Casserole


Sweet Onion CasseroleLast week’s winner was the Sweet Onion Casserole. I changed the recipe from the original and used smoked Swiss cheese in it–oh, it was good! I put some extra parsley on top because my plant has finally started producing after 4 months of barely hanging in there. I will post this recipe in the near future, so check back for it!

This week’s menu is a little different than most because my family is going to be visiting us (all the way from Illinois!) from Friday to Sunday. I wanted to cook for them at least one night, but I really have no idea what my brothers eat besides Taco Bell and Hot Pockets. (Isn’t that what people in their early 20s eat? It is, right? Oh, and maybe ramen too?)

Monday: Garganelli with Asparagus and Pecorino Cheese
Lately I’ve been in the mood for pasta all the time. Delicious carbs.

Tuesday: Mushroom Fried Rice and Flash-Fried Kale with Peanuts
I’m using edamame in the fried rice instead of peas. Peas are nasty little things, aren’t they? Yuck.

Wednesday: Jerk Pineapple Tofu
I’m adapting this from a recipe in Everyday Food for Jerk Pineapple Pork Chops. I love the flavor of jerk seasoning and you can’t go wrong with pineapple.

Thursday: Veggie Burgers with Caramelized Onions + Sauteed Brussels Sprouts
Easy meal!

Friday: Roasted Brussels Sprouts + Rosemary Mashed Sweet Potatoes with Shallots + Cauliflower Gratin + Wild Rice with Mushrooms & Parsley + …?
A big dinner because my family is visiting.

Saturday: Going out to eat?

Sunday: Going out to eat?

I would add that if you want a true vegetarian meal, be sure to check the ingredients label of the Pecorino Cheese since most is made with animal rennet.

I hope it works out with tofu instead of pork chops! Back in Madison, there were two (yes, TWO!) restaurants that served jerk tofu and it was so good. This recipe is a little different since it has pineapple (and it seems like it will be less spicy), but it sounds pretty good to me.

Thanks–I’m trying. LOL. I was uploading some of the photos from my old posts to WP and holy crap, some of those food pictures are SO embarrassing. There’s a book about food styling & photography that I want to buy as soon as I accumulate enough Amazon GCs…
