Menu Plan Monday [Vegetarian Meal Ideas!] – 10/3

How was your weekend? Mine was pretty great. I decided to cut my work hours to something a wee bit more manageable (as much as I like making extra money, sanity is also important–I tend to forget about sanity), so I actually had a full weekend to do whatever I wanted. On Saturday, we went to a little Oktoberfest dealie in Raleigh and enjoyed crepes and an oompah band and gorgeous weather. And then on Sunday, we trekked to the outlet mall and I took advantage of a sale at the Le Creuset outlet. I bought a new pie dish, a nice little saucepan (both in Kiwi) and I got a free red gratin dish too. And then the cashier gave me a coupon for 40% off any piece of enamel cookware that expires in November–oh darn, I guess I’m going to have to go back.

Anyhoodle, since I cut down on work, I have more time for cooking. No frozen veggie burgers and fries! Looking for vegetarian meal ideas for Meatless Monday? Look no further! Here’s what’s on the menu for this week.

Monday: Grilled Roasted Vegetable Pizza
I love using Indian simmer sauces on pizza and I’ve got another Japanese eggplant that needs to be used soon.

Tuesday: Pasta with [Veggie] Sausage, Leeks, and Lettuce
So this is one of those recipes that’s either going to be really really good or really really weird. But we’ve got the sausage in the fridge and the lettuce in the garden, so hey, why not!

Wednesday: Creamy Hungarian Mushroom Soup
When I visited Hungary, I think I subsisted entirely on bread, candy, and apple juice, so I don’t exactly have fond memories of Hungarian cuisine. But this mushroom soup sounds so good and it’s easily made vegetarian by using mushroom broth.

Thursday: Wild Mushroom Crepes + Browned Butter Asparagus
I love asparagus! But only the thin kind. I hate it if it’s thick. Is that weird?

Friday: Lentil Pilaf + Roasted Sweet Potatoes
We bought the lentil pilaf at the farmers market. We got couscous from the same vendor and it was fan-freaking-tastic, so I have high expectations for this pilaf.

Saturday: Going out to eat
I want to hit up the mall in Durham this weekend (it’s the only mall in the area with an Anthro and there’s a coat there that I want to buy), so maybe we’ll find a restaurant there. And while we’re in Durham, perhaps we’ll go to Locopops so I can get a Thai Rice Pudding popsicle.

Sunday: Leftover Soup
Sorry, that’s not very exciting, is it?

Your meals are always seem so fun to me! I still need to look for some of those Indian sauces at the store. I keep forgetting, but I’ve been craving Indian Food. It never occurred to me that I could put it on pizza.

I can’t wait til next month when I can cut back on work too. The extra paycheck is nice but work/life balance is so important! Sounds like you had a nice relaxing weekend 🙂

Yes, it was SO nice to relax a little. It’s hard for me to slow down because I like being busy (and I like having money for shopping, ha!), but I’ve been running on empty for a while now. With your schedule, it sounds like you could use more time off too!

Since you’re going to Durham this weekend you should hit up Ikea. I was in there today and had a thought about your awkward wall. Go look at the tall ceramic vase/pot things and the tall grasses they have in there. That might look kind of cool. Or not.

Ikea is in Charlotte, not Durham. 🙁 But we’re planning on going to Illinois for Christmas and Ikea is on my to-do list there. I do want to get a big vase! Crate & Barrel always has cool ones, but they’re so pricey.
