Menu Plan Monday [Vegetarian Meal Ideas!] – 8/8

How is the weekend over already? Ugh. Just UGH. Last weekend, I managed to get a lot of things knocked off my to-do list. But this weekend? Nothing. Well, not much anyway. I spent most of the weekend working. And now it’s Monday and I’ll work some more. And then next weekend, I will probably also be working. Serenity now! Serenity now!

So yeah. This menu plan starts out with a bang and ends with a whimper. The bang being awesome recipes I’ve come up with myself and the whimper being frozen pizza. It was kind of the same thing last week. The winner from last week’s line-up is the Eggplant Salad with Israeli Couscous and Basil:

Monday: (Vegan!) Pepper Jack Potato Corn Cakes + Strawberry Salad
I’ve harvested the lettuce to make room for a cauliflower plant, so it’s time for salad. The Potato Corn Cakes is a recipe I will be posting later this week.

Tuesday: Grilled Pizza with Roasted Veggies and Tamarind Garlic Sauce + Chai Popsicles for dessert
This is another dish I made with the Stonehouse 27 sauces I received to review. We’ve never grilled pizza before, so this will be an exciting adventure! Or unmitigated disaster!

Wednesday: Peanut Butter BBQ Sauce Marinated Tempeh Sandwiches + Sweet Potato Fries
Yeah, that’s right, I totally bought Paula Deen barbecue sauce.

Thursday: Garlic Rice + Roasted Cauliflower with Kalamata Olives and Lemon
Have you ever roasted kalamata olives? SO GOOD. I used to have a recipe for this dish, but I’ve made it so many times that I just wing it now.

Friday: Kashi Frozen Pizza
Frozen pizza is pretty much the least filling meal ever, isn’t it? Because a serving size will be, like, 1/3 of the pizza and the pizza is small to begin with. I’m sorry, that’s a serving size for a 3 year old. Usually I serve salad or something that’s not very calorie-dense on the side to round things out.

Saturday: Going out to eat
We still have that Groupon for the burrito place, so it may finally be the week that we use that.

Sunday: Whatever looks good at the farmers market…
