Menu Plan Monday – 8/1

Lately I’ve been so busy with work, I haven’t been able to cook as much as I’d like. I’m relying on easier meals and the help of my husband, but even still, last week there was one day that we ended up ordering pizza. I hate this and I hope I’m able to get into a better routine soon.

Despite that, last week was still full of deliciousness. The highlight of the week was the Basil-Infused Lychee Lime Ice Pops. Yes, I’m still obsessed with my Zoku, and no, I’m not tired of making popsicles yet. If you’re looking for something refreshing and tropical to help you cool off from the heat outside, try these popsicles!


Here’s this week’s line-up:

Monday: Barbecue Veggie Burgers with Sauteed Vidalia Onions + Panzanella Bruschetta Salad
It doesn’t get easier than veggie burgers and salad, does it?

Tuesday: Roasted Chickpeas and Cauliflower with Stonehouse 27 Cashews & Cream Sauce

Wednesday: Eggplant Salad with Israeli Couscous and Basil
Seriously, my basil plants are like the size of small trees right now. If you have good recipes that use massive amounts of basil, please send them my way!

Thursday: Sweet Potato Gnocchi with Kale + Sauteed Zucchini
The zucchini is a maybe–I’ve been having bad luck with my zucchini starting strong and then rotting on the vine. I have one that I think will be ready in time for this recipe, but I’m not sure.

Friday: Wild Mushroom Crepes + Roasted Potatoes, Green Beans and Red Pepper
This is all frozen food. Because by Friday, I am completely! out! of! energy!

Saturday: Going out to eat
We ordered a rug from Crate & Barrel and we need to go back to the mall in Durham to pick it up, so I think we’ll find a place around there. The rug, BTW, was on sale for $300, marked down from $799. I love it, but then I got home and read reviews for it and everyone gave it a one star because it sheds. Sob! But I think I can put up with the shedding for $500 off. That’s what my Roomba is for.

Sunday: Whatever looks good at the farmers market…

The last time I made my own veggie burger, somehow some fuzz accidentally got into my bowl. The burgers were edible if you didn't mind a little fuzz. Anyhow, I haven't made them for awhile, but I think I will attempt them again soon. They sounds good to me, so long as they are fuzz-free.

I'm not good at making veggie burgers either. I tried making black bean ones and they were all dry and too crumbly. Any tips on what to do?!
