Nobody likes Mondays, but let’s focus on the positive. On Mondays, I watch the previous night’s episode of Real Housewives on the DVR. Positive! And since we go grocery shopping on the weekends, our fridge is well-stocked with fresh fruit on Mondays. Positive! And! And! And! On Monday, I do my weekly menu plan post, which I really enjoy. Positive!
Monday: Roasted Fresh Corn, Poblano, and Cheddar Pizza + Fat Elvis Ice Pops (for dessert)

Tuesday: Grilled Squash with Miso Marinade + Caribbean Tofu
East meets West (Indies).
Wednesday: Wild Mushroom Flatbread + Cantaloupe Mozzarella Salad
The flatbread is from Trader Joe’s and the salad is an adaptation of a recipe from Everyday Food. The original has prosciutto–mine does not.
Thursday: Edamame Succotash + TBD
I think we’ll have leftover salad from Wednesday, so the TBD will likely be that. I’m so excited about this succotash because it uses basil and a red pepper from my garden!
Friday: Veggie Burgers with Sauteed Vidalia Onions + Leftover Edamame Succotash
Burger time! Remember that video game? No? Does this refresh your memory?
Weren’t we so easily amused in the 80s? Kids today would have no tolerance for a game where you assemble burgers. None at all!
Saturday: Going out to eat
I’m thinking we’ll be using a Groupon we purchased to a local Middle Eastern restaurant. Hummus!
Sunday: Whatever looks good at the farmers market…
