Menu Plan Monday – 7/18

By Kiersten | Last Updated: December 24, 2011

Nobody likes Mondays, but let’s focus on the positive. On Mondays, I watch the previous night’s episode of Real Housewives on the DVR. Positive! And since we go grocery shopping on the weekends, our fridge is well-stocked with fresh fruit on Mondays. Positive! And! And! And! On Monday, I do my weekly menu plan post, which I really enjoy. Positive!

Szechuan Dan Dan Noodles

Monday: Roasted Fresh Corn, Poblano, and Cheddar Pizza + Fat Elvis Ice Pops (for dessert)
Be on the lookout for both of these recipes on my blog in the near future! This pizza is perfect for Meatless Monday. And speaking of Meatless Monday, if you’re looking for some ideas and tips, check out my guest post on Texas Type A Mom, A Meat Eater’s Guide to Meatless Monday.

Tuesday: Grilled Squash with Miso Marinade + Caribbean Tofu
East meets West (Indies).

Wednesday: Wild Mushroom Flatbread + Cantaloupe Mozzarella Salad
The flatbread is from Trader Joe’s and the salad is an adaptation of a recipe from Everyday Food. The original has prosciutto–mine does not.

Thursday: Edamame Succotash + TBD
I think we’ll have leftover salad from Wednesday, so the TBD will likely be that. I’m so excited about this succotash because it uses basil and a red pepper from my garden!

Friday: Veggie Burgers with Sauteed Vidalia Onions + Leftover Edamame Succotash
Burger time! Remember that video game? No? Does this refresh your memory?

Weren’t we so easily amused in the 80s? Kids today would have no tolerance for a game where you assemble burgers. None at all!

Saturday: Going out to eat
I’m thinking we’ll be using a Groupon we purchased to a local Middle Eastern restaurant. Hummus!

Sunday: Whatever looks good at the farmers market…

I'm stopping by from Finding Joy in My Kitchen and oh my… I love the game burger time!! I could play it for hours. I'm so happy you mentioned it 🙂

Wow, I love that the first thing I saw when I loaded "Type A Housewife" was a week menu list, haha. So organized! I love organization 🙂

I do this, too actually, because it makes grocery shopping a lot smoother, but not quite as organized–I don't plan what goes on what day, I just decide on 7 dinner meal ideas and then do what happens.

Anyhow! I wonder if that mushroom flatbread from TJs is vegan, that sounds yummy! What a delicious looking menu 🙂

The grilled mushroom flatbread sounds amazing! That burger game made me chuckle too 🙂 The 80s were a quality decade, wasn't it?

I'm part Chinese and dan dan noodles is one of my favorite noodle dishes. Thanks for posting an easy recipe – I can't make them, I just enjoy them!

So, I nearly fell over when I read your menu! Everything sounds so yummy and healthy. I think I need to make some homemade pizza.

And I was much too busy for Burger Time as a child. I was playing Q-bert.
