Menu Plan Monday – 6/6

I feel like it’s been weeks since I made a decent, home-cooked meal. And it probably has been. Not only do I miss cooking because I enjoy it, but I miss it because I’m becoming a fatty fat fat on all this take out. I feel so gross! We got the kitchen fully unpacked this weekend (although not everything is where I want it yet–but at least it’s unboxed) so it’s time to start cooking. Woo hoo!

Of course, we’re still busy, so I planned meals that are quick and that have leftovers. So I’m not completely back to a normal cooking schedule, but I’m getting there. After a few weeks of pizza and ice cream and Thai food, leftovers are looking pretty good.

Monday: Vegetarian Poutine with Bacon
Poutine is a fast-food staple in Quebec. It consists of fries topped with gravy and cheese curds. I found a recipe for a lower calorie version and I altered it slightly. I will be posting my version tonight!

Tuesday: Orecchiette with Broccoli Rabe, Oregano, and Lemon
The grocery store here was sold out of broccoli rabe, so if they don’t have it by Tuesday morning, I might make this with turnip greens instead.

Wednesday: Leftover Orecchiette
I know people think leftover pasta is a travesty, but I’ve never found it objectionable. So there!

Thursday: Peach + Veggie Sausage Pizza with Arugula Salad
This is loosely (very loosely) based on a recipe I saw in Cooking Light. I’m hoping to find Smoked Apple Sage Field Roast sausages here for this, but if not, I think I’ll use Italian Sausage.

Friday: Leftover Pizza and Salad
Do you heat your leftover pizza? I hate it heated. And actually, I prefer cold leftover pizza to the fresh stuff. It really grosses my husband out.

Saturday: Sweet Tomatoes!
…because there were coupons in the paper for Sweet Tomatoes today! The restaurant, not the vegetable. Er, fruit.

Sunday: Mystery Meal!
I’m hoping to go to the farmers market this weekend, so Sunday’s dinner will be dictated by what we find there.

I like cold pizza but find if I re heat in oven it is better then micorwave.

I love leftover pasta…it's usually in my lunch at least twice a week!

I would rather eat cold pizza than microwaved pizza, but the best way (IMO) is reheated in the oven.

are you kidding me? i actually hide a couple of slices in the fridge so i can have it cold for breakfast the next morning! food for the gods! yum!

I love cold pizza too and also prefer it over reheated pizza. Sometimes I'm the same way on pasta too! I can't wait to read the vegetarian poutine with bacon!
