Last week was a bit of a mixed bag–there were some keepers and some recipes that ended up being tossed. But even the ones that I threw away weren’t terrible, so at least there’s that!
And now onto this week!
Monday: Swiss Chard with Cashew Creme Sauce + Fresh Fruit
This recipe is from the awesome blog Nap Time is My Time–seriously, if you’re not reading it, you should. I love Swiss chard and I love cashews, so how can you go wrong with this recipe? Answer: You can’t. You just can’t.
Tuesday: Crispy Potatoes with Spicy Tomato Sauce + Falafel
I’m so excited for the potatoes–I love them when they’re crispy!
Wednesday: Wild Mushroom Ravioli with Artichoke Marinara Sauce + Roasted Broccoli
When I make pasta, roasted broccoli is my go-to side dish.
Thursday: Vegetable Korma + Naan
Vegetable Korma! With edamame! And naan! Can you tell I’m excited?
Friday: Leftover Veggie Korma
…so let’s hope it’s good.
Saturday: Sweet Tomatoes!
No, not two weeks in a row. I had a craving for Yogurt Mountain this weekend (yes, again) and I didn’t want to have froyo AND lunch at a buffet. So we went to a Middle Eastern restaurant instead for a lighter meal. NEXT weekend we are totally doing Sweet Tomatoes.
Sunday: Whatever looks good at the farmers market…
Expect this the entire summer on Sundays.
