Happy Monday! I stayed up late last night watching the news, so I’m feeling pretty groggy this morning. I need a chai tea latte, stat.
So! Menu Plan Monday! Last week was one of minimal innovation and minimal cooking. Things are crazy here–I feel like I’m saying that constantly, but it’s true. One of my favorite meals from last week was the buttermilk pancakes with sauteed bananas. I attempted to make the bananas without alcohol and they turned out awesome. We froze half the pancakes so we’re having them again this week. So yeah, that’s like 4 weeks in a row that we’ve had them for dinner. Like I said, minimal innovation.
Last night, we made Farro Risotto with Mushrooms for dinner and we’re having the leftovers tonight. So, so good! I had never had farro before, so I’m always excited to try (and like) something new.
Well, enough about last week. Let’s move onto this week!
Monday: Leftover Farro Risotto with Mushrooms + Roasted Asparagus
I will be posting the farro recipe tonight, so check back for that! As for the roasted asparagus, we have a jar of mushroom stock mix in the fridge and I decided to make a sauce for the asparagus using a little of that, diluted in water. It turned out fabulous and we’re going to make it again soon, since it’s asparagus season (woo hoo!).
Tuesday: Leftover Buttermilk Pancakes with Sauteed Bananas
I love freezing leftovers. Easy meals, y’all!
Wednesday: Potato Pie with Smoked Cheddar and Veggie Bacon
While perusing Everyday Food, I saw a recipe for a potato pie. I didn’t read the recipe beyond seeing that it had bacon in it–once I saw that, I didn’t bother saving it. But since then, I’ve had the idea of a potato pie in my head. I mean, potatoes! They are good! If this turns out well, I will post the recipe next week.
Thursday: Walnut Tofu Burgers with Caramelized Onions and Smoked Cheddar + (Baked) Garlic Fries
Something I’m really going to miss about Madison is Nature’s Bakery Co-op and their amazing, wonderful, tasty veggie burgers. In fact, thinking about not having them anymore is making me a little bit emotional.
Friday: Pasta with Sweet Pepper Sauce + Roasted Mushrooms
An easy meal. Roasted mushrooms are never not good.
Saturday: Going out to eat
We’re going to be in Illinois for my husband’s birthday, but his family is doing brunch. We’re hoping maybe we can swing by Pita House (hellooooo, falafel!) on the way home, but it’s a wee bit out of the way.
Sunday: Peanut & Sweet Potato Soup?
We have a few jars of peanut butter that expire soon, so I need to make things involving peanut butter.
