I guess doing Menu Plan Mondays at this point is a bit silly. Planning anything right now is difficult. But I’m a creature of habit, so I just can’t stop myself. I promise some spectacular meal plans coming up once we get settled in our new house.
There’s not much to say about last week. The only real recipe I made was the German Potato Pancakes and they turned out perfect. Well, they didn’t look perfect, but they tasted perfect and that’s what counts. I plan on making them again in the future with some homemade applesauce. This week is another one full of simple meals and take out. Half my kitchen is in boxes!
Monday: Twice Baked Potatoes with Ginormous Amounts of Veggies
We used to have these all the time, but it’s been a while. Basically, instead of loading them with sour cream and cheese, I use a small amount of flavorful cheese (in this case, smoked cheddar) and heaps of veggies (onions, broccoli, and mushrooms this week).
Tuesday: Brown Rice & Beans
My husband is going to be out-of-town for the day, so it’s dinner for one tonight.
Wednesday: Buttermilk Pancakes with Sauteed Bananas
Yes, again. But after this, we’ll have used up all the buttermilk powder!
Thursday: Thai Rice + Peanut Tofu
Don’t get too excited–both of these are store-bought convenience foods.
Saturday: Going out to eat
I think we’re going to go to Bluephie’s and if we do, I’m totally getting a lentil mushroom burger. Tastiness.
Ordering pizza would be good–I think we’ll be running around like crazy trying to get everything taken care of before moving day (which is Friday!). Pizza is good because it’s quick and there’s always plenty of leftovers.
