Menu Plan Monday – 4/25

I hope you all had a fantastic Easter! We’re going to visit our families in Illinois in May, so we stayed home for Easter this year. I made potato pancakes and I lamented the fact that I wasn’t able to find the crunchy-shelled Cadbury eggs anywhere here. So sad!

Last week’s menu plan had a few winners. Perhaps the biggest surprise was the Pierogi Bake, which I completely made up as I went along.

Monday: Noodles & Company
Since their Truffle Mac & Cheese is only going to be available until May, we decided we had to get it one more time before it’s retired. You all know how I feel about truffle oil. Plus, it gives us a good excuse to be out of the house when our apartment is being shown. Again. (Won’t someone please rent our apartment? All these showings are so irritating!)

Tuesday: Rotini with Butternut Squash Sauce and Roasted Cauliflower + Onions
Yeah, we had this last week too. But with only two of us, it takes us 2-3 meals to use up a jar of pasta sauce.

Wednesday: Roasted Cauliflower in Lemon-Tahini Sauce + Bulgur Salad
The cauliflower for the pasta meal is ginormous, so I’m using half of it to make this recipe. We have tahini to use too, so it works out pretty well. This is one of my favorite recipes ever, BTW.

Thursday: Buttermilk Pancakes + Cinnamon Bananas
We ended up not making pancakes last week, so I moved them to this week’s meal plan. And I added bananas! I’m going to try to make sauteed bananas minus the alcohol, so we’ll see how it turns out.

Friday: Amy’s Roasted Veggie Pizza
By Friday, I’ve completely run out of steam for the week, so frozen pizza is the perfect meal.

Saturday: Going out to eat
If it’s nice out, we’ll go someplace downtown. You’d think that by the end of April, you could bank on it being nice out, but not so in Wisconsin.

Sunday: Farro Risotto with Mushrooms
I’ll post the recipe for this next Monday if it turns out well.

Roasted cauliflower sounds great – I've always wondered about the Dave's sauce, they have it at World Market here. Thanks for the review!
