Last week was one without meal planning, since we spent it in North Carolina. But I will tell you this: the Raleigh area has some amazing dining options. Like a Thai restaurant with grapes in its red curry. Grapes! And a Middle Eastern restaurant that rivals even those from the Chicago area. No more falafel that people inexplicably rave about even though it tastes like licking an ashtray (*cough*Madisonisnotnearlyasawesomeasitthinksitis*cough*).
Oh yeah, the meal plan. Yes, that. Here it is:
Monday: Roasted Red Pepper Linguine with Pesto and Roasted Mushrooms
It sounds fancy, but it will take about 15 minutes to make. This week is all about easiness.
Tuesday: Tomato Basil Bagel Burgers (um, yeah, we had bagels on hand and I didn’t want to buy more buns) and Green Beans with Spiced Breadcrumbs
Have I ever mentioned how much I love breadcrumbs? They make everything taste better. Seriously.
Wednesday: Veggie Stir Fry with Peanut Sauce
I bought green onions, broccoli, and zucchini for this, so it will be a very green stir fry.
Thursday: Buttermilk Pancakes
Breakfast for dinner! I have a bag of buttermilk powder and eggs to use up before we move, hence the frequent appearance of pancakes on my menus.
Friday: Amy’s Roasted Vegetable Pizza
This is seriously the best vegetarian frozen pizza out there.
Saturday: Going out to eat
Since we’re moving next month(!), we’re trying to hit up all of our favorite restaurants now. If it’s nice out, I think we will go to Buraka downtown and get our injera on. Mmm, injera…
Sunday: Perhaps Senegalese Peanut Soup?
…because we have a lot of peanut butter.
