Last week’s menu plan was pretty intense–lots and lots of cooking. Since we’re getting ready for our house hunting trip and I anticipate that this week will be an awful one for me work-wise, I planned a really easy menu this week.
Oh, and on the subject of last week’s menu: it rocked. Having come up with several ideas for the sweet potato blogger recipe contest, I spent the week serving up a different one almost every night. My husband’s favorite was the Irish Stew with Sweet Potatoes and Tempeh, while I was partial to the Sweet Potato Pizza with Kale and Caramelized Onions. I’m so happy with the recipes I created that I think I’m going to start entering more recipe contests in the future. You know, with all the spare time I have.
Anyway, onto this week’s menu!
Tuesday: Butternut Squash Ravioli with Olive Oil & Sage and Roasted Broccoli
Wednesday: Buttermilk Pancakes with Pomegranate Syrup
Thursday: Tomato Basil Burgers with Garlic Mashed Potatoes
Friday: Noodles & Company
Saturday: Cafe Manna
Sunday: Confession–I have no idea yet.
