Peppermint Bites

ingredients:

    Mint Filling

  • 1/4 cup cashews
  • 1/4 cup refined coconut oil, melt
  • 1/8 cup coconut butter (warmed & mixed)
  • 2 drops food-grade peppermint oil
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • Chocolate

  • 1/4 cup refined coconut oil, melt
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons yacon syrup
  • 1/4 cup cacao powder

instructions:

    Mint Filling

  1. Process cashews until flour-like consistency in the food processor. Add all remaining ingredients and process until it is an even, smooth consistency. Pour filling mixture into a mini circular silicone mold. Place in freezer for 20 minutes.
  2. Chocolate

  3. Mix all wet ingredients together in a small mixing bowl. Add cacao powder and whisk until well blended. Remove frozen mint fillings from mold. Dip each individual candy into chocolate and place onto parchment paper. Place in the refrigerator for 10 minutes, serve and enjoy.
