I’m finally starting to feel better after being sick for over two weeks. I still have a lingering cough and each day begins and ends with a sore throat, but I am so happy to get back to normal. So! Happy! What’s with the germs this winter?! It seems like not only is everyone sick, but everyone is really sick.
Anyway, here’s what I ate this week:
Sriracha Quinoa Bites from Leaf + Grain // These are completely ingenious and while I haven’t had the chance to try it, I have a feeling they freeze really well too. I made them in a regular size muffin tin because I couldn’t reach the mini one (sad, right?) and they’re the perfect portion for a delicious side dish.
Baked Garlic Fries // So I have this awesome method for making crispy baked fries that I got from Cook’s Illustrated, but I was in a rush and I didn’t use it for these, which I regretted. They were a little bit soggy.
Curried Quinoa Mango Salad from The Fig Tree // Tragically, my mango was completely rotten in the middle when I cut into it to make this salad. But would you believe, this salad was still amazing?
Fresh Mozzarella, Pesto & Sun-Dried Tomato Grilled Cheese // Okay, spoiler alert: I made the bread I used for this sandwich and I’m posting the recipe next week. I was pretty darn excited about it.
Miso Update
Miso has been recovering slowly from his surgery (much more slowly than we’d like, unfortunately), but he seems to be a lot more active and happy than he was before. During his surgery, the vet found some suspicious tissue in his bladder and she sent it to the lab for testing; we found out last week that the tissue is pre-cancerous. We’re trying to stay positive–at least we know what’s going on and we’ll start bringing him in for regular ultrasounds so if he does get cancer, we can catch it right away and start treatment.
So that’s the update. I wanted to wait until Miso was completely recovered before I wrote about how he was doing again (don’t want to be a downer, you know?), but a lot of people were asking about him so I don’t want to leave people wondering. Thank you again for your comments and emails–it has been a rough few weeks and your kind words have meant so much.

I love the grilled tomato sandwich and looking forward to your recipe on the bread. I am gluten free so I appreciate special meals like these. I use a gluten free flour.

So glad Miso is recovering. My daughter was sick before Christmas and she still has the cough…it is awful. I love all of the recipes of the things you ate this week. Those fries are outstanding!
I hope your daughter feels better soon! I still have a cough in the morning too. I think that’s always the last thing to go!
