What I Ate This Week | Make These Now: Frozen Pretzel Peanut Butter Pies

Whoa, it’s Friday–how did that happen? And where did the first week of August go? I am resolving to cram as much summer (and corn, obviously) as I can into the next month. I’m going to the beach, I’m buying a Slip-N-Slide, I’m going to go on a picnic, and I’m going to wave down the ice cream truck when it drives by this afternoon. Okay, maybe not that last one, because guess what?

Frozen Peanut Butter Pretzel Pies Frozen Pretzel Peanut Butter Pies from The Frosted Vegan // Ohh yes, as soon as I saw these, I knew I had to make them before the end of summer. They’re as delicious as they sound, they’re easy to make, and you really need to make them soon or immediately. (Probably immediately.) I had coconut whipped cream in the fridge, so I topped mine with a dollop of that.

Vegetarian Youvetsi with Roasted Cauliflower and Red Pepper Vegetarian Youvetsi with Roasted Cauliflower and Red Pepper from Greek Vegetarian // Another recipe from one of my favorite blogs! I made this for lunch, so I cut some corners by not peeling the tomatoes and by throwing the orzo in with the sauce instead of cooking it separately since I had to sneak cooking in between working, but this still turned out incredible.

Seared Tofu with Long Beans and Asian Coconut Sauce Seared Tofu with Green Beans and Asian Coconut Sauce from Gourmet // I found a way to use up some long beans! I choose this recipe because we had everything on hand for it and I wasn’t expecting all that much, but this was really tasty. I love me some cashews.

Raw Sweet Potato Fries with Chipotle Mayo Raw Sweet Potato Fries with Chipotle Mayo from Rawmazing // I did a little cookbook shopping last month and this is one of the books I bought for myself. I want to eat everything in here! I wasn’t sure how raw fries would turn out and they were a little bit chewier than baked sweet potato fries, but they were dehydrated enough to make them softer than completely raw fries. The faux mayo was smoky, spicy, and delicious too (although I put half the amount of chipotle seasoning in it because I’m weak like that). Oh, and if you don’t have the book, the recipe is on the Rawmazing blog too.

BBQ Squash Chips BBQ Squash Chips, adapted from The Sweet Life‘s recipe // I wanted to post a recipe for this on my blog, but I could never manage to get the barbecue seasoning quite right, so I gave up. I’m sticking with The Sweet Life’s version from now on, which hasn’t failed me yet.

What’s New on the Marketplace This Month
