Okay, maybe easy meals aren’t the best meals. Clearly the best meals are the ones that are lit on fire right before serving. (Note to self: start making more recipes involving live flames.) But! When you’re super busy, easy meals are pretty good, so it’s been easy meals for us all week long.
Here’s what I ate this week:
Caribbean Tofu + Miso Green Beans + Roasted Purple Potatoes // I was all excited when I spotted these purple potatoes at the Asian market, but then I got the sads when I found out they were white inside. Boring! But they were really good–they seemed slightly less sweet than regular sweet potatoes and a little firmer too. The green beans were frozen haricot verts from Trader Joe’s that I tossed with a little bit of miso and rice wine vinegar. So easy!
Pasta with Veggies and Meatless Meatballs // This picture is the first one I took with my new umbrella light, so pardon the wonkiness. Anyway! When I make pasta with jarred sauce, I always add more veggies than pasta. It’s more filling this way. This time, I used zucchini, onion, and baby bella mushrooms that I sauteed in a little bit of olive oil.
SNACKS! // The past two weeks, I wrote a lot about the fruit I was snacking on, but since that hasn’t changed (it’s still a steady rotation of apples, concord grapes, kiwis, and pomegranates), I thought I’d give a shout-out to some of my favorite packaged snacks this week. The Kind bars were from the fabulous Conscious Box that I received to review on Dealectica (read my review here!). Oh, and yes, I do eat toddler food. Don’t knock it till you’ve tried it, yo.
Vegetarian Meatloaf + Roasted Cauliflower with Cheddar // I just posted about the meatloaf, so I won’t add anything else about that. The cauliflower recipe is from Everyday Food. Mine didn’t turn out as pretty as Martha’s, but I loved this recipe because it’s just cheese on top, not some crazy fatty fat sauce–just cheese. Just cheese!
Chipotle-Potato Soup with Frizzled Leeks + Sweet Potato Molasses Rolls // The soup is from Fresh from the Vegetarian Slow Cooker. This is my favorite cookbook–we’ve made lots of recipes from here and there hasn’t been a disappointment yet.
