What I Ate This Week | Black Bean Burgers with Sriracha Aioli (Because aioli is kind of my thing now)

Yes, I realize this is the second post involving aioli this week. It’s like when I discovered peanut sauce and went through a phase when I put it on everything. (Okay, that wasn’t a phase. I still put peanut sauce on everything. Hush.) And maybe you’re all, “Hey Kiersten, aioli is so 2002″ and maybe that’s true, but this is cashew aioli, so it’s different, okay? Just let me have my aioli moment.

Vegan Pumpkin Cheesecake Truffles Vegan Pumpkin Cheesecake Pops from Tasty Yummies // I made these without the sticks, so they’re really more accurately described as cheesecake truffles. Cheesecake bites? Well, whatever, they’re delicious! They’re made without refined sugar and with cashew cream instead of dairy. Want more cashew cream ideas? Jamaican Jerk Tempeh with Vegetables and Quinoa Jamaican Jerk Tempeh and Vegetables from One-Dish Vegan // I bought this cookbook because I’m a big fan of one-dish meals and this one didn’t disappoint. We had this over quinoa and had tons of leftovers, so we got lunch and dinner out out of it.

Creamy Mushroom Fettuccine Creamy Mushroom Fettuccine from Cooking Light // I added more mushrooms to this recipe, hence the high mushroom-to-fettuccine ratio in this photo. I whipped this together in a snap, so it made a great busy weeknight meal.

Lentil Soup with Cauliflower and Cheese Lentil Soup with Cauliflower and Cheese from Martha Stewart Living // Lentil soup with cauliflower? With broiled cheese on top? I want to eat this always. The weather is starting to finally get chilly here and this is the kind of meal I want to eat right now. Cold weather + hot soup = happy Kiersten.

    Awwww … Kiersten! Gretchen and I are so thrilled you featured our Apple Cobbler Muffins! You always have such awesome recipe round-ups – I totally look forward to them! As a huge Cooking Light fan, I was excited to see the two recipes of theirs you featured, neither of which I’ve tried yet (I’ve gotta get right on that)! And Martha’s soup with melty cheese on top?!?!? Yes, I want to eat it always right along with you (perhaps always followed by those pumpkin cheesecake pops)! Oh – and please keep having that aioli moment!!! :D

      Thank you for the recipe–they were awesome! I’m making another Cooking Light recipe this week too. Turnip fries with pomegranate ketchup! We’ll see how they turn out because I’m kind of on the fence about turnips. :)

    I’m sure I’ve said this before but you eat the best food! Seriously, wow!
    I’m so feeling a bean burger right now, and those pumpkin “truffles” look insanely good.
    Hope you share your thoughts on “One Dish Vegan” once you’ve tried a few recipes. I’m considering getting a copy but would like to read a review first.

    Somehow I missed this Kiersten!! Thank you for sharing and I am sooo excited you loved the pumpkin cheesecake pops/bites. Your photo is beautiful!!! I need to make them again that way, the sticks add a whole ‘nother level of steps between making these and shoving them into my face ;)
