What I Ate This Week + A New Look for Oh My Veggies

Oh My Veggies Redesign
Have you noticed that it looks a little different around here? The talented, fantastic, and super nice (she’s really so nice!) Shay Bocks redesigned Oh My Veggies to give it a brighter, cleaner look. She also developed a custom Genesis child theme that makes my categories easier to browse through, that’s mobile-friendly, and that accommodates larger images. Working with Shay has been so much fun and I’m absolutely in love with Oh My Veggies’ new look. Thank you, Shay!

Another thank you goes to my friend Kaitlin Kostus, the artist who painted the colorful veggies and kitchen tools you see throughout the site. Kaitlin and I met through mail art when we were teenagers and since then, she’s gone on to publish several zines and pursue her art professionally. You can check out more of her art on her webshop, Atelier K, or hire her for illustrations and other commissioned works.

And here’s what I ate this week:

Cheesy Zucchini BakeCheesy Zucchini Bake // I made this on a whim when I realized I had everything I needed for it. I love it when that happens! I used heirloom summer squash that I had bought at the farmers market and green onions from the garden. I added more squash and a little less cheese than the original recipe called for, but it turned out perfect.

Yellow KiwiYellow Kiwi! // You can’t always find these, so when I see them at the grocery store, I have to snatch them up. You know how sometimes kiwi is a little bit sour and acidic? Yellow kiwi is never like that. Yellow kiwi tastes like the best green kiwi you’ve ever eaten. Does that make sense? No? Okay.

Vegetarian Meatloaf, Roasted Broccoli & Mashed PotatoesVegetarian Meatloaf + Roasted Broccoli + Mashed Yukon Gold Potatoes with Mushroom Gravy // I hardly ever make mashed potatoes and having them this week made me realize that I should really make them more often.

Cheesy Zucchini QuinoaCheesy Zucchini Quinoa // Yes, it’s another cheesy zucchini recipe! But this one has quinoa in it too. Delicious!

Raspberry Peach Fruit LeatherRaspberry Peach Fruit Leather // We had some past-their-prime peaches this week, so I made fruit leather with them. Mushy peaches: they’re good for milkshakes and fruit leather.

    Ooooooh! The Cheesy Zucchini Bake looks fantastic! I just put several bags of zucchini and yellow squash in the freezer and have some more that I’ve been trying to think of how to use.

    • I’m jealous of all your zucchini and squash! Next year I’m really going to have to do something to prevent vine borers. :( But at least the farmers market is practically giving away summer squash so I can still get my fill!

    • Thank you! Clean is exactly what I was going for–clean, but still a little bit quirky. I was so excited that Shay immediately understood what I was going for & was able to take all my vague ideas and make them a reality. :)

  13. I picked up some gold kiwi fruit last weekend and my kids loved them – they are so much sweeter than green kiwi and have a whole different flavor.

    • I love green kiwi, but the yellow ones are much more mellow tasting. And the texture always seems to be perfect too–never too hard, never too soft. I wish they sold them year-round!

    • When everyone was going back and forth about which veggie I should use, I freaked out slightly. So I guess I might be losing an entire segment of readers that can’t stand the sight of artichokes, but what can you do? ;)

    • Thank you! I always got such good feedback on my old design and people were discouraging me from changing it, but I wanted something a little brighter. I’m glad I did it in the end!

    • Thank you! The quinoa recipe is totally worth making–and it’s so versatile, you could add other veggies to it too and it would still be delicious!
