What I Ate This Week | A Fancypants Tart and Other Delicious Things

I don’t know if it’s the heat or the fact that I’m in desperate need of a vacation, but I have been completely unable to focus on anything this week. I sit down to write and I find myself staring at the screen for 20 minutes before throwing in the towel and spending an hour browsing Pinterest or Etsy instead. Yo summer, why do you make me so unproductive?

Here’s what I ate this week:

Leek & Olive TartLeek & Olive Tart // If you don’t read Rikki Snyder’s blog, you need to start because her photographs are absolutely breathtaking. I omitted the Camembert and for some reason, I was unable to roll out my dough to the size required by the recipe, but this tart was a whole lotta savory amazingness.

Thai Style Grilled CornThai-Style Grilled Corn with Roasted Peanuts // I’m almost done rephotographing my old recipe posts! I did 3 this week, including this Thai corn recipe. There was local corn at the farmers market last weekend, which I was pretty thrilled about. Yes, I get thrilled about corn. AND?

Pizza Quinoa CasserolePizza Quinoa Casserole // If quinoa is a hard sell in your household, try this casserole. Surprisingly, it really does have the flavor of pizza. We had this 2 nights in a row with veggies on the side and it made a delicious, filling meal.

Chocolate Pomegranate Granola BitesChocolate Pomegranate Granola Bites // I swear, these cookies get better and better every time I make them. I only wish it was easier to find dried pomegranate seeds! Luckily just about any dried fruit will work in this recipe.

Spicy Cantaloupe Cucumber SaladSpicy Cantaloupe Cucumber Salad // Is there any better summer side dish than fruit salad? I don’t think so.

  3. Oooh, that corn looks so good! And I officially have that cookie post bookmarked to try sometime, even though I’ll have to sub in some other dried fruit, they look great! Thank you for the link! I’m so glad you liked the quinoa :D I need to start doing a post like this. So often I try other bloggers recipes but I don’t have a way to post about them and this is perfect.

    • We totally loved it! Back when I started blogging, I used to do Menu Plan Monday, but I found that I like this format better because instead of saying what we’re going to eat, I can write about what we did eat and how it turned out. :)

  4. You’re making me hungry again and I’m over here trying to be good lol. The pizza quinoa casserole looks delicious and I just might have to give it a try. It doesn’t look too bad calorie wise. Also, I like the term ‘fancypants tart’.

    • Yeah, I’m on WW and I slacked with counting points for the week, but you could use less quinoa and add some veggies to the casserole to make it more low cal. I think I might try it like that next time…

  6. Mmm this all looks so good, I especially want to try the pizza quinoa casserole! I also liked how you used the word ‘yo’ at the start of your post .. I think that Vanilla Ice song is still stuck in your head :) haha

    • It has been in my head all week long! All week! From the time I wake up in the morning to the time I go to bed, it’s 24/7 Vanilla Ice. I mean, I’ve had worse things stuck in my head for longer periods of time (like the summer of “Pour Some Sugar on Me”), but I’m hoping that something else will replace it soon…

  7. I don’t think unproductive people cook like this. Aren’t those the people who microwave dinners or open a can of soup every night?

    I get excited about corn! I’ve never thought to put peanuts on it, and now I’m intrigued.

    • Ha! Cooking was just about all I could manage to do this week. I blame the humidity. And that recipe was the first time I had peanuts on corn, but they really do go together nicely!

  8. Glad you said any dried fruit would work in the Chocolate Pomegranate Granola Bites cause I was thinking about dried cranberries. WOW the tart looks amazing! All your photos make me hungry.

    • It was so good! But you can’t go wrong with leeks and olives. :) And I’m glad that using your desk is working out better for you. It’s funny, I didn’t realize that so many people would be able to identify with my situation when I wrote that post!

  11. As always, I love your recipes! Fancypants tart is what drew me to the post. I am so going to try the pizza quinoa recipe because my husband gets sick of quinoa if I make it too much. This way, he won’t know what’s in it (I hope!)

    • Ha! I love quinoa, but usually I serve it in the same kind of way–in a cold salad or as a base for something saucy. This was the first time I’ve baked it in a casserole, which was a nice change of pace.
