Saturday Six | Chickpea Sandwiches, Spinach Artichoke Quinoa Casserole & Raw Andes Mint Pie

Saturday Six - 02.22.14
Every Saturday, we highlight some of our favorite submissions from Potluck. Here are this week’s picks:

Raw Andes Mint Pie // This rich, decadent pie is dairy-free and made with whole food ingredients–no food coloring here, that green is all natural! Get the recipe from Oatmeal With a Fork →

Chocolatey Overnight Oats with Strawberries // Overnight oats are a great breakfast option for those of us who rush through our mornings–all the prep work is done ahead of time, so in the morning all you have to do is take them out of the fridge and eat! Get the recipe from Healthy Nibbles and Bits →

Spinach Artichoke Quinoa Casserole // If you like Spinach Artichoke Dip (and let’s be real, who doesn’t?), you will love this creamy, cheesy quinoa casserole. Get the recipe from Making Thyme For Health →

Chickpea Pesto Sandwich // Do you miss chicken salad sandwiches? These sandwiches just might take care of that craving! Get the recipe from Running to the Kitchen →

Peanut Butter Banana Chickpea Cookies // You can’t taste the chickpeas in these cookies, but they add protein and fiber, making these cookies delicious and healthy. Get the recipe from Hummusapien →

Sweet Potato and Black Bean Pizza // The perfect Saturday night dinner! Instead of a traditional sauce, this pizza is topped with a smoky black bean spread. Get the recipe from Cookie Monster Cooking →

Some lovely recipes that will bring a bit of a change to the regular fare in my Indian vegetarian kitchen. The chickpea pesto sandwiches really do appeal to me too like they do to Robin!

I want to make all of these recipes…now! The chickpea and pesto salad is going to be first on my list! Thanks for sharing! (Btw, it’s nice to “meet” another Kiersten – that’s kinda rare!)

Name twins! It always weirds me out when I see someone else with my name because I’m not used to it. But since I’ve started blogging, I’ve had a few people leave comments or send me emails to tell me that they’re named Kiersten too–I guess none of us are used to seeing other Kierstens! :)
