
I learned something new today: nectarines are a type of peach. Crazy, right? The difference between the two is that peaches carry a gene that gives it fuzzy skin. But nectarines will sometimes grow on peach trees on an outgrowth called a bud sport. I just totally blew your mind, right? I’ll let you sit with that for a minute. I know you have a lot to process right now. Paradigms have shifted and such.

When it comes to summer fruit, I always neglect the nectarine. I’m all about peaches and watermelon and cherries, and I forget that nectarines are delicious and in season too. And apparently I’m not the only one–when I went to the grocery store to get nectarines for this recipe, I had a lot of trouble finding them until I realized that instead of having their own area, they were shoved into the corner of the peach bin. Poor nectarines!
Although a fruit galette makes a nice, simple summertime dessert, I’m of the opinion that they make a good lunch or dinner too. And that’s exactly how we ate this Honey and Nectarine Galette–as a light dinner with a simple salad dressed with a citrus vinaigrette. The honey adds sweetness without making the galette too sweet. And without all that added sugar, the flavor of the fruit really shines through.

Oh, and yes, I used prepared pie crust dough. I have a brand that I’m happy with that uses real ingredients and it saves me quite a bit of time. You are certainly welcome to use any kind of pie crust you like and you are also welcome to feel superior to me, shake your head at me disapprovingly, or condescend to me in any other way. Because I love prepared pie crust and you will never change that fact. Never!
A summery galette that can be served for dessert or with a salad as a light main course. And all you need are 3 ingredients--yes, really!
Ingredients
- 1 refrigerated pie crust (or use your own favorite recipe to make crust from scratch)
- 3-4 firm nectarines, thinly sliced
- 1 tbsp. honey
Instructions
- Preheat oven to temperature indicated on pie crust package. Lay crust on a rimmed baking sheet lined with parchment paper or a non-stick liner. Starting about an inch and a half from the edge of crust, place nectarine slices in overlapping circles until you reach the center of the galette. Fold edges over filling. Drizzle with honey and bake for 10-15 minutes or until crust is golden.


































I think the Mr will explode when I attempt this. I don’t know that I’ve truly ever had a nectarine. I might’ve had a bite of the Mr’s but it didn’t leave enough of an impression that I could tell you what it tastes like. I know…scandalous!
You need to try them! Throw one in your fruit salad!

Ha! Nectarines are one of those fruits that I never buy, but when I do, I’m all “Ohhh, nectarines! These are so good! I should buy them more often.”

I was just reading an article last night about peaches and it said the same thing about how nectarines are basically just peaches without the fuzzy skin and that they sometimes grow on the same tree – I was surprised too! I’ve never thought of eating a galette like this for dinner but I love the idea, it looks fantastic!
I kind of figured people would think having a fruit galette for dinner would be weird.
But it’s not an overly sweet one and it was perfect with salad!

Oh my yumminess! That looks so light and fresh! You’re going to have to share your preferred brand with me on the pie crust. I love making pies but have only attempted crust once and it was just not worth all the extra time it took, at least my first attempt anyway.
It’s definitely not worth it if you can’t make it! And I can’t. So it’s like all this extra work, for what? I’m trying to bake more, but I will always be more of a cook than a baker.

Gorgeous!! I didn’t know that nectarines are a type of peach. I always found them unpleasantly crunchy… I wonder if my dad just always bought unripe ones (though he has a knack for picking the best whole watermelons by knocking and listening)? I’m a peach gal, through and through.
They were probably unripe! I never liked fruit when I was younger and it’s because my mom likes unripe fruit and that’s all she would buy. So I always thought pears, peaches, nectarines, etc. were all crunchy and tasteless.
i love the idea of using a galette as a dinner! we don’t do enough savory, or at least, not-so-sweet, pies and pie type things. i love nectarines and peaches, and try to spread my love accordingly. i’m just glad you left the skins on. can’t stand a skinned peach! (or nectarine)
I leave the skin on just about everything I can. Except sweet potatoes–for some reason sweet potato skin is where I draw the line.

I’ve never made a galette because they kind of intimidate me…but this one definitely sounds easy, and has a beautiful presentation! I tend to mix up peaches and nectarines – especially when I see an unlabelled crate at the farmers market! I should try using them both in more recipes this summer though
You should! I used to be more of a berry person myself, but last year I started using peaches a lot more in my cooking and baking. You can even just cut them in half and grill them & they’re a perfect side dish or dessert.

Whole Foods has two brands I really like. They have a frozen one that’s made with only butter and flour–I can’t remember the name of it, but it’s so good. Much better than what I manage to make myself, sadly!
