We had quite a busy weekend. I wanted to go back to the big farmers market in Raleigh on Saturday because I felt like I was so overwhelmed by its sheer awesomeness last time that I didn’t really get everything I should have. So this time, I bought lots of perennials (salvia! clematis! other plants!) and orange mint, which I guess I didn’t really need, but I couldn’t resist the smell. Then on Sunday, we spent most of the day digging up sod, rocks, and ginormous lumps of clay so I’d have a place to plant everything. It was a lot of work, but it’s so nice to have some flowers in the backyard now. I just hope everything survives in our crappy soil.
Oh, and in case you were wondering, we bought some veggies at the farmers market too. Lots of veggies! We made grilled heirloom squash sandwiches with five different kinds of summer squash and pesto–we bought something called an Italian cheese pepper (!?) too and I was planning on roasting that but it was full of mold inside when I cut it open. Sad! But the sandwiches were still super good and reminded me that, despite the heat and humidity, there’s a lot to love about summer.
Of course, I can’t forget to mention our favorite meal from last week, the Vegetarian Moussaka. The combination of spices in this was perfect–the casserole was so aromatic and filling. It can easily be made vegan too by omitting the topping.

Monday: Saffron Couscous + Grilled Peach Halves + Peaches and Cream Popsicles
The couscous is from the farmers market, as are the peaches. And yes, I also made the popsicles last week–they didn’t turn out quite right, so I’m trying again.
Tuesday: Tempeh and Eggplant Satay + Brown Rice
Back in Wisconsin, you could get one kind of eggplant at the farmers market. Maybe, if you were lucky, you could find Japanese eggplant too, but very rarely. Here, I think there about a dozen varieties being sold by several different vendors. We bought a small white eggplant and a long green one, and I plan on adding some of my little round eggplant to this as well.
Wednesday: Portabella Mushroom + Grilled Yellow Squash with Parsley Pesto
Have I mentioned how sad my parsley plant is? I have no idea what’s wrong with it. The stems grow to a certain point and then they break off. I think I have about 4 leaves total on the plant. So obviously, this is not pesto made with parsley from the garden.
Thursday: Veggie Burgers + Mashed Cauliflower
I guess you’ve probably noticed that veggie burgers make a frequent appearance on my meal plans. But they’re easy and they’re good!
Friday: Roasted Eggplant and Chickpea Soup + Sweet Potato and Molasses Rolls
Yes, this is also a repeat from last week. I made the soup last weekend and froze it in two containers, one for last week and one for this week. If you have lots of eggplant from your garden and don’t know what to do with it, you need to make this soup! I had never thought of using eggplant in a soup before, but this is quite tasty and it freezes well, which is a bonus.
Saturday: Going out to eat…
…I have no idea where.
Sunday: Whatever looks good at the farmers market…
After two weekends in a row of the big farmers market, I’m guessing we’ll probably go to the smaller, local one this weekend.
