What I Ate This Week | The Easiest Pasta Bake and a Thank You!

Before I get to what I ate this week, I just want to say thank you for all of your support on the launch of Potluck. I really appreciate the tweets, pins, and recipe submissions! And here’s what I ate!

Easiest Pasta Bake Easiest Pasta Bake // I will admit, this blog has me making fewer throw-together recipes than I used to. Before I started blogging, I’d make a few new recipes each week, but also a few quick meals like tacos, pasta, stir fries, and things like that. This is one that I used to make all the time, pre-blogging. I boil some pasta and while I’m doing that, I sauté some veggies in about a tablespoon of olive oil. I drain the pasta, toss it with the veggies, then stir in some jarred pasta sauce. I put the whole thing in a casserole dish, top with mozzarella cheese, and bake it at 350ºF, until the cheese melts (about 10 minutes or so). So simple!

Sweet Potato Patties with Caramelized Onions & Mushrooms Sweet Potato Patties with Caramelized Onions & Mushrooms from Fabtastic Eats // Oh man! OH MAN! You should really make these. I didn’t have time to caramelize the onions, so if you’re short on time, you can just sauté them and this recipe will still be delicious. With the barbecue sauce on top, these kind of reminded me of veggie burgers, sans bun.

Chai Pumpkin Oatmeal Chai Pumpkin Oatmeal from Healthy Green Kitchen // I had pumpkin leftover from another recipe, which is a good excuse to make pumpkin oatmeal, right? This is a filling, hearty fall breakfast right here!

Roasted Broccoli Grilled Cheese Roasted Broccoli Grilled Cheese from Two Peas & Their Pod // Roasted broccoli is delicious. Grilled cheese is delicious. Together? OMG DELICIOUS. Get out of my dreams, get into my car. Or mouth. Whatever.

Cauliflower Soup with Shiitakes Cauliflower Soup with Shiitakes from Cooking Light // I love a good creamy cauliflower soup. I made this with vegetable stock instead of chicken stock, which is an easy substitute that has never failed me. Don’t not make a recipe because it calls for chicken stock!

    The second I read the BBQ + sweet potato recipe, those flavors instantaneously made sense together. The Billy Ocean reference made me die!

      I sing that song to my husband all the time and it absolutely horrifies him. :) And yes, the sweet potato patties are so good–I love BBQ sauce with my sweet potato fries too!

    Beautiful food pictures as usual! I’m with you on the easy pasta bake — I used to make a similar one often but haven’t made it in awhile. Now I have it in my brain for when I need an easy dinner idea! And I’ve never done grilled cheese with broccoli, but it sounds fantastic!
